  • I roast eggplant and add garlic and fried onions.

  • we normally grill the eggplant until it goes soft like you do bell pepper / capsicum and then feel off the skins. with the soft flesh meat inside we add a mixture of onions, lime juice, chillie pepper if you like it spicy, cilantro and season to taste. goes well as a side dish or on sandwich. Another method is use the grilled flesh of the eggplant and add to egg mixture and fry up eggplant omelette.. yum!

  • Good video. Thanks. I will add 2 it ... eggplant does not have to be ripe in order to be healthy eats. In fact, if an eggplant shows any sign of bitterness it is because it is too ripe. Eggplant comes in many varieties, colors, shapes and sizes. The big deep purple ones we buy in the stores are the most likely to be old and therefore bitter. (I come from a culture where everyone grew eggplant and ate it several times a week, so I know a little something about it. Enough said. Happy eating!

  • Great information. Thanks for sharing. How small of pieces did you chop up the eggplant before putting on your salad?

    One of my favorite bottled healthy dressings is Sophia's Oil Free Cilantro and Lime salad dressing. I bet that would be great with Eggplant.

  • Karen this is a great video! I find it to be very informative. Eggplant is one of those misunderstood vegetables. Can you believe I have read in nutrition studies that it has little nutritional value!? Sorry but I think not. I think we need to sick Karen on em' and set em' straight lol One thing I just learned is it's tryptophan contents, amen! I only eat raw food and haven't fancied it raw but never thought to juice it. I can make my own moussaka juice!

  • I will for sure. I have to find it locally grown and organic first though as that's how I eat... so when I see it at my local farmer's market I will pick some up and create an eggplant creation juice! maybe moussaka style - I remember eating that in the past during food addiction behaviors and know the super yummy flavor. Raw foodists make fake bacon from it!

  • Can you post the preparation for fake bacon or upload a video if you have it to this video? I'd love to try it.

  • I don't make any complicated raw dishes but I can direct you to the recipe. It's basically marianted strips of raw eggplant and then dehydrated. You have to get the perfect timing though or it comes out bad. I tried to make it once and didn't like it. It's also heavily seasoned... will find you a video recipe and share. If I can't find one I will direct you to Gone Raw website where I know you can see it!

  • @MyOwnStickFigure I was shocked by this video, I have herd the same thing, that eggplant had little nutrition, It might have even been on good eats, I'm glad to hear that does have a lot of good things going for it. I'm a chef so I will cooking more eggplant in the future

  • the throw whole egg plant wrapped in foil paper in the oven and once its cooked I add diced onions with some coconut oil , saute it and then add salsa , lemon pepper, lots of lemom in it and at the end I add the eggplants (diced)
