Now I know YouTube has freakin' everything! I never heard of a Kuri Squash until I bought one at Whole Foods. I had no idea how to prepare it. Loved the video, I feel like I know you guys!
If you like squash and want something really good and different, try speghetti squash. Cook it and use a fork to pull the stringy fibers out and ladle on your favorite itallian sauce. WOW. it is so good! Love the vids so far...keep up the good work
I must be getting old, those people look like major young to me (how weird is that?!). They're lucky to have a home and a yard to work with. Most people that age are still in apartments. I was enduring the constant abuse of US Army life when I was that age (shudder!). I cook acorn squash but I scoop out the seeds before cooking and then nuke the sections before squashing them. I've never eaten the rind though, I'll have to try that. I made a few videos on living simply in an urban setting.
Squash is great for protein (not just the skin). Great job on showing how to cook something and for trying something new. Will definetly give squash a try as a mashed potato alternative! Keep posting!

I love squash. I have it for a meal quite often in the winter months. So yummy. I have never heard of Kuri. Do you know if it is only located in your area? Great idea about fixing it like smashed potatoes...I'll try that next time!
oh no, its not located only in our area, but it would be easier to buy from a farmer or coop who sells heirloom veggies (as opposed to a big chain grocery store)

I have never been to the Victor Market. How would you compare it to the Public Market in the City? Do they have more organic items?

Try adding about a table spoon of maple syrup for every pound of squash.... it makes it extra special hehe

for even tastier potato mash try adding some nutmeg. I haven't tried it with squash but I can imagine nutmeg would go very well with that too.
