he is extruding the edges and pulling the vertices in order to make them match the reference picture. sometimes he connects to vertices to each other to fill the gap. he is also very careful to have a good topology. i love this way of modeling because you have the sense of depth from the beginning. i suggest you to start modeling from basic objects in order to learn the tools first, then you will understand what did he do and why did he do these steps.
I really like your unwrapping technique. Did you cut the model in half, apply the symmetry modifier and then begin to unwrap? either way I am definitely going to follow this method the next time I create a character. thanks it really helps. your modelling aint bad either:D
What programme are you using?, windows or mac? And how much does it cost?
