Verjus is actually the juice of green (unripe) grapes, le "jus" du raisin "vert". It is usually flavored with various spices according to the household's preferences or what is available. It was (and is) a common commodity in western Asia and made its way into Europe during the Roman Empire. In parts of France (the Ardeche, for example) the juice of crabapples flavored with herbs is often substituted and is available in markets. It is used like vinegar in dressings, sauces and such.
