The only series that haven't been done that come to mind is Mirai Nikki, Persona 4: The Animation, School Days, Vampire Knight, AnoHana, Steins Gate, Chaos;head, Bakemonagatori and Nasenmonagatori
Prince of Tennis . . . but do try to avoid the numerous possible balls-to-the-face gags (unless you could make it a clever running joke). I know it's hard, I have to keep my mouth shut when I watch the darn series.
