  • FOr some dishes i find these perform better than cast iron. I find with cast iron the pan actually soon absorbs oil or butter you fry food in but these steel pans they don't really absorb much oil whihc has its advantages. BOth are excellent but i find different dishes suit different pans.

    Great point. Yeah the best set of pans is a mix of brands/type. Some things just cook better in my tin lined pan, or heavy Lodge cast. I'm still breaking in the de Buyer but I am finding myself grabbing it more and more often these days...
