The ESP stabilization system makes sure that the brake system is primed with hydraulic fluid, usually when executing an emergency braking. It work simultaneously with the ACC. I heard It can be unpplugged and will change car performance,but haven't donne it and dont think this whould influence quattro system...exemple turning it into rear tire propulsion. Which is perfect to execute the "keep sideways while going straight " thing. let me know if i'm wrong....
Ive got a 2000 a6 quattro and it does donuts just fine. Haha it might be before the newer esp was developed but I can whip them out no problem.

On my A6 4.2 I've got a button on the dash to turn the ESP off. That's what you really need to do good donuts!

i got a 2,8 a4 and there so hard to keep sideways while going straight they just want to got forward..great performance
