Ya know, I don't remember ever having carrots as a side dish growing up. They were only cooked when they were in a soup or something like that. I don't think I've ever cooked them myself. I'll have to give this a try. Thanks!

@beth it really brings out the flavor of the carrots. I also add a little sugar free maple syrup as they are cooking. they are sooo yum my girl eats them if i do them that way otherwise she wont touch them

I like my carrots raw or with avocado. But each to their own! :) haha however, with the calorie content of the ingredients you added i may have a couple of cupcakes instead XD
@CookingAndCrafting OMG YES! At one point I was eating like 5 carrots a day for lunch & dinner side meals and when I went to the doctors they were concerned I had something wrong with me because I was a tint of orange (kind of scared me too) but luckily when I stopped it went away!
@MissPonderosa Yes, it can tinge your eyes too. I wonder if t hat is why they say it is "good for your eyes?" I dunno but it's weird how the color will transfer . I am hoping once my garden's dirt is better (need to add calcium), I am going to start growing some!
I make glazed carrots at holidays or sometimes Sunday meal. I use the baby carrots and boil them like you said then add the br. sugar and a bit of butter. Sometimes I do it in the oven. I cover them though and just let them slow cook. Hugs girlie!!

This is how my mom did carrots!! Love it. She also had a sweet and sour carrot recipe that I didn't keep because it used tomato soup!! I never would try it but now that I'm more inclined to try it I don't have the recipe. I have a carrot souffle recipe that I make at thanksgiving and it invariably winds up on the dessert table!!
You can cook carmelized apples the same way - use Delicious apples, or other firm apples that keep their shape when cooked (Northern Spy is good). Just core and slice into wedges, leaving the peel on, and cook in your brown sugar/butter mixture until they are tender and glazed. They are a nice side addition to pork dishes. Glazed carrots are a favourite in my house!
