Primarily the latissimus dorsi muscles. Many other muscles of the upper back. Upper trapezious, posterior deltoids, abdominals, triceps, to name a few. It's intended purpose is to train the lats through their full range of motion, without the limitations of the weaker pulling and gripping muscles of the arms.
I hate to be too critical here because I respect the fact that you are trying to teach people something of value. The gentleman is actually using a Women's Pullover that was produced for much smaller bodies. The machine next to it should have been used to demonstrate the exercise. And FYI, the seatbelt is an absolute requirement on this movement.
Arthur Jones would have told you to use the seat belt so that you would not move your low back and your legs to push off and cheat.
