If you ever go hunting and you should it's a wonderful experience always use every part of the animal possible. I think this is the best way to "justify" the kill.
I believe people who are against hunting would willingly eat "people" when faced with starvation long enough. And frankly, in the case of a global catastrophic event, they would have to eat people because they wouldn't have the skill to kill anything else to eat.
