  • If you don't eat pork you can easily substitute chicken/turkey bacon or turkey kielbasa!

    I brown the turkey bacon in the pot, try to let it cook long enough so it sticks to the bottom of the pan. than when u add the sauerkraut, scrap the bottom of the pan thoroughly. It add's a great flavor !!

  • in this part of germany you can add some bacon cubed up , put 2 apples in cook it good put some white vinegar in and add some muscatnut? dont know how u call it over there hf ;)

  • ey man, the idea to serve it in a roll is brilliant. ya should try to get a patent on it. that might become a alternative fast food in future. this recipe has the quality to beat out all tacos or döners or burgers. thumbs up^^^^^^^^

  • yummie yummie ! - here in bavaria every family gotz its own sauerkraut recipe. but you gotta put an apple in. thatz a must. and at the end you should rab 1/2 potato in with a grater. that thickens it a bit. if ya want it a bit fruity, take instead of the apple a can of sliced pineappes. tastes super. guten appetit.

  • Kraut, Zwiebeln, Speck, einen Apfel mitkochen, Nelken, Lorbeerblätter.

    Kraut, onions, german bacon looks leaner (google Speck), cook an apple (not a green one) and bay leafs with the kraut, add cloves. that's what i know of my mother's recipe. i guess i'm missing some things but that's in there for sure.

    and considering the sausages. until the coals burn down put them in a bath of water. sprinkle them with beer while they are on the grill. drowning them in beer is a waste of beer though.

  • In germany, young adults are allowed to drink, it is part of the heritage. I like the show Jason. I live in wisconsin and I swear by melting butter, beer and kraut in a pan on a (charcoal) grill. I was disappointed you used gas. Then putting the brats in to par boil sort of speak and the grill them to late put back in the butter and beer. Next time come to the Oktoberfest in La Crosse, WI. I'm told it is the biggest and best in the US

    btw. it's a myth that the alcohol evaporates completely when you cook it.... so it's a good thing to leave it out or substitute it if you serve the food to kids...

    that's cool! I had a Grill Party a few weeks ago and we put the brats and the Sauerkraut together on the bun for the kids and the loved it!

    It's a good idea, 'cause kids wanna run around in the back yard, this way they can eat some out of their hand!

    Of course I passed on the Riesling for 'da kids'

    In Germany you can buy Sauerkraut with diced Pineapple in it so be creative!

  • It´s so cute how do you say: Bratwurst and Sauerkraut! We don´t eat Sauerkraut and Bratwurst in a sandwich. Garlic in Sauerkraut is new too. But I will try to cook this recipe.

  • This recipe sounds great Jason but when I went to two local grocery stores I found gathering the ingredients for this dish impossible.

    Juniper Berries where not to be found in the spice aisle at two stores I looked at and also could not find a real "German Riesling" wine. I can get the Juniper Berries online but was hoping you could recommend an American made Riesling or what quality's (peach, apricot..etc) I should look for in the wine.. Thanks Chef!!

  • Hi there. You can use a regular riesling or Gewurztraminer wine. Any type will do. It just adds a bit of sweetness to the kraut. The juniper berries add a unique flavor to the dish, so if you order them online, you'll have enough to last you quite a while.

  • That was mustard.  I should have mentioned that in the video!

  • That was a horseradish sauce, which you can make yourself mixing a bit of mayo or sour cream with horseradish paste. You can just use mayo if you like!

  • me again. we make this all the time,with shredded leaves in a large bowl. or whole cabbages in large plastic bins 40L or so. they taste great. you should ass the recipes fillina paprika. and cabbage rolls with the mince inside it is simple delicious. (im from a wog family and we always make food like this)

  • Good question. I soaked mine in Miller Lite because it was the only beer I had in the fridge.  It was good, but I prefer Newcastle for marinading pork...

  • Great video. I was drinking all day at work today (don't tell my boss), and when I got home I saw this kickass recipe on YouTube. After 8 or 9 more beers I cooked up one of these brats. Man, did it taste great. My wife even took a bite of my sausage too. Thanks ChefTips.
