the fish is in the same shape as it was for cutting the first side which usually makes for a nicer cut - the void from the missing fillet puts a bend in the backbone which is hard to follow with the knife - use a serrated knife for the first cut across the head - and save the scotch for the after filleting party - "don't drink and fillet"
