I saw that someone already asked about the bread crumb substitute which you said the sooji would work well and I think it would be a great alternative.

I prepared the cutlets according to ur instructions. It came out delicious. But the oil became very black and i could see bread crumbs left over at the bottom of oil. It is like i cannot use the oil again for anything else. Kindly tell me a suggestion to avoid this. I dipped the cutlets in maida flour and then in bread crumbs.
Instead of bread crumbs, one can use corn flour. Also if the maida batter is slightly thick, cutlet comes out crisp & excellent! I make cutlets 'cylindrical', put it in the batter & roll it in corn flour and fry it until it turns golden brown. You can eat it with ketchup or cilantro or imli/dates chutney.Use only potato,peas,carrot,beans. Manjulaji is awesome,she cooks like i do without onion/garlic!

@lalaith2011 I am not manjula, but wanted to tell you that Cilantro is the english name for it. It looks like parsley but it has a different flavor. It is also a Mexican seasoning. You can find cilantro at any American produce section of a big food store.
@lalaith2011 Here in America, if you look in the vegetable sections of a regular American Food Store, most list cilantro as cilantro. It reminds a person of parsley and usually is next to it in most American Grocery Stores.

You can prepare the cutlets half fried and refrigerate for four five days, heat cutlets in oven 350degree for 15 to 20 minutes i will not suggest to refry cutlets will be very oily.

yes I dry the bread and blend in food processor or you can buy plain breadcrumb.
I try not to reuse the oil, so I use small frying pan because of that I have to fry few at a time.

The really awesome thing about this dish is that the ingredients are found in most kitchens.
I'm going to give this dish a try this weekend. I'll add cayenne pepper which I think will go great with the ginger.
