and I think "developed an easy system" contradicts with your weakness of "lack of organization" itself.
How about, I have to reread things once or twice because even though my vocabulary is par, I realize that some people have different writing styles and choice of words. I also realize that some people do not know how to communicate as well as I do and if there is a language barrier, I have to rely more heavily on my patience than my analytical skills.
(If you ask me, interviews are a joke anyway. %90 the time the interviewer has no clue)

Organizations want to know how you address your blind-spots. First you have to recognize them & then you have to take action to mitigate them.
Here's the opportunity: Many provide poor answers. Provide a great answer and you will have differentiated yourself from other candidates. Self awareness is a requirement for leadership.

I think your answer is good, but it is disingenuous. Instead of a strength masquerading as a weakness, you trot out a weakness that you have overcome -- which is no longer a weakness.
The problem is not with the answer but with the question itself. It's a stupid, lazy question that interviewers use because it's a question they have been told to use or a question that they have been asked in the past.
A question that begs for a less than candid answer is not a good question.
@shelterislandtrade it's hard to disagree with your assessment of the question's value. If everyone knows it's coming, what insight can it possibly reveal? However, I must disagree with your assertion that the answer is disingenuous. The weakness I describe is real. It's mine. And I still have it. But I have acknowledged my weakness, adapted techniques to minimize its impact and integrated those techniques into my day. My actions demonstrate a capacity for honest self assessment and adaptation.
