A lot of books have said that he felt abandoned at an early age from his unstable home life and for whatever reason it transitioned into killing and consuming victims and keeping body parts so he wouldn't feel abandoned. I think they did research on his brain or atleast wanted to, maybe that explains some of his abnormalities.
