Removing the scent glands on a deer will only contaminate your knife. Don't even deal with leg glands! Cut the legs off at the joint above glands and skin em. The best way to good deer meat is good shot placement, keep hanging carcass cool below 38 and hang for a week and a half. Young deer butcher right away. Pan fry rarish, and can't be beat!!!
The only good deers I have have eaten are the real young ones. I have had deer jerky that tasted like I was licking an old billy goat. Get a young doe, gut her fast, make sure she bleeds out and soak the meat in salt and vinager for 24 hours like the women said. I can't stand gamey deer meat. I don't understand why anyone would want an old deer unless they want the antlers more then the meat.
If your deer is "REAL STRONG" It's not being handled properly in the field. If your old man is driving it around in the back of the truck for 2 days showing his buddies, this could be your problem. By the way, deer isn't supposed to taste "just like beef". IT'S DEER.
another way to get the wild out is to cut the glands off of the front legs theres this dark spot on the front of the legs kinda were our elbow would be
If you gut and skin in the field or with in an hour of killing you do not have to do all that b/s and will never have wild taste. If it is cold enough let it bleed out for a day hanging. Gut shots sometimes there aint no getting around it but wash the meat asap. Wild taste comes from the blood and skin.
@d00rgunner58 Point being......gut it and skin it as soon as you kill it. There will never be a wild gamey taste to the meat. This is for the ones that like to put it on the hood and parade it around then wander why it taste funny.
wild means sort of strong tasting unlike storebought meats such as beef stew meat--I've got a cousin who used to place deer meat in ice water in sink and then pour a can or two of beer into sink with meat...he claimed it took most of the gamey taste out...but since he was a dang alcoholic back then, I wonder if it was just another excuse to have beer consumed-ha!
@2528997 wild means it has a sort of tangy taste to it and its an acquired taste and not everyone likes it so there are things you can do to take that taste out of the meat.
You need to let the deer age for a week or two and NOT freeze it right away.....this lets the rigor mortis relax and lets the meat break down to be more tender like they age beef for weeks
why would anyone want to take the wild taste out of deer thats the best part about it but if u want to take that taste out milk or coke a cola works too but i love that wild taste...........
From what I know, as long as the hunters feild dress it immedialty and don't leave it out to 'season', it's all good. A 24 hours saltly ice water soak is good too, after you get it all chunked up.
Italian Dressing, Coke, Sprite or anything else so highly acidic would kill the taste in anything ... to take the 'wild' out of any meat is to process it fresh ... most of the wild you eat is due to the hunter not getting the meat processed quickly and/or cleanly ... want more ... MSG me! ;)
I like my deer to taste like deer. Maybe there is somthing wrong with me:)

Thats right dewittbros, but you also need the fridge to have high humidity inside too. Age all your top cuts of venison this way.

You know it's a country girl when rinse is pronounced like wrench ! My mama was the same way, so it's not a putdown.

why take out the wild? I think that is why it tastes to good.

soak your meat in salt water over night and then soak it in 7up or Sprite. It takes the game right out and tastes really good.
