  • Where is part 2??????!!!!!!!!!

  • Odd that they call wood ash acidic in this episode.

Potassium hydroxide solutions (made by filtering water through wood ash) were the traditional lye formulations.

  • i guess 33 people get hungry watching AB

  • Don't cut off the membrane, that's the delicious crispy part we call 'the skin', and the bit we all fight over in our family. I am from New Zealand so we know our lamb!!

  • @sassyangelkiwi ok so lamb skin tastes good i tout u can only eat chicken skin because lamb skin is wat we use to make jackets

  • @respectbluder no, your thinking of wool,!! lol.

  • @sassyangelkiwi lol good one but no im thinking of real leather sweet

  • wet ashes get acidic? as far as I know water and ashes form a lye...

  • @W0tanTheGod Totally agreed. I think they just misspoke.

  • @W0tanTheGod In the spirit of Alton Brown... :)

Ding Ding Ding! Yup, you're right - wood ashes (assuming we're talking hard wood) can form caustic potash/Potassium Hydroxide creating a wood lye. The pH of wood lye is around 13 (it's basidic). So, you're right - it's not acidic. It is, however, highly corrosive so our poor grills wouldn't fare any better than if it were a week battery acid. If we're talking briquettes with all their other constituent ingredients...that's a different pH.

  • Cant find part 2 of this video...

  • yumm

  • When I go to part 2 of this episode I get an error saying that the video contains scripts which are prohibited in my country (Canada) any way to fix this?! It has also happened with some other episodes

  • anyone know what kind of grill Alton uses?

  • its there in his book 3 ..a weber and some australian one

  • I use the grill at least twice a week no matter what time of year it is.

  • That doesn't seem high to me. I live in upstate New York, and we'll even use the grill in the winter occasionally (maybe once a month). In the summer, probably twice a week.

  • Also upstate New York, and I second the use of the grill in the winter!

  • yea we do too...in northern michigan...just have to move the four feet of snow first

  • Heh, heh... I'll admit it - I grill 3-4 times a week. Steak, burgers, veggies, breakfast eggs, pot of home made chili, even pizza! You name it - I'll grill it.

I also grill in the dead of winter. -45F doesn't deter me, either.

Winter grillers are a special fraternity of proud and crazy.

  • I'll grill just about everything, the only thing I can't grill is eggs they just seem to fall through the grill. :-p

  • just use a tray lol

  • @C5Rigzz Another person located where -40 (both F and C, the only number where they meet) occurs in the dead of winter. We grill in winter as well.

  • Yeah, I grill as often as I can. If all I have is charcoal, I'll use it once a week or so. If I've got a gas grill, I'll probably use it a few times a week. Everything just tastes better out there...

  • I used mine (when I still had one) at least 2 or 3 times a week. Sometimes more than that.

  • I can't believe I'm actually vegetarian

  • same here

  • weird he never uses that grill ever again and its all webber kettle after. maybe it has to do with endorsments or something

  • i ment corned beef

  • do you have corend beef

  • convenience and setting things on fire... lol

  • Alton Brown is a GENIUS!

  • Molecular Gastronome ftw.

  • you'd be crazy not to! lol

  • Does anyone else get Hungry watching AB?

  • i do

  • @arc2417:

Well, I certainly do while watching Good Eats!

...Ofcourse, I can say the same for Tony Bourdain's No Reservations, Eric Ripert's Avec Eric, Martin Yan's 'Yan Can Cook', and a whole host of cooking shows that are no longer in production (Julia Child's 'The French Chef' etc., David Rosengarten's 'Taste', Stephen Yan's 'Wok with Yan', Two Fat Ladies, Graham Kerr's shows--including 'Galloping Gourmet', Justin Wilson's various shows, and Mario Batali's shows.)

  • @arc2417 Agreeded

  • @arc2417 - yeah coz a lot of people I know watch it after smoking a bowl.

  • I like his Ekco Ultd. shirt!

  • That rub looks very delicious.

  • This was the first episode I ever saw. Got addicted to it right away.

  • Hey, I'm a Rocket Scientist too....(Aerospace Engineer)
