Ding Ding Ding! Yup, you're right - wood ashes (assuming we're talking hard wood) can form caustic potash/Potassium Hydroxide creating a wood lye. The pH of wood lye is around 13 (it's basidic). So, you're right - it's not acidic. It is, however, highly corrosive so our poor grills wouldn't fare any better than if it were a week battery acid. If we're talking briquettes with all their other constituent ingredients...that's a different pH.
When I go to part 2 of this episode I get an error saying that the video contains scripts which are prohibited in my country (Canada) any way to fix this?! It has also happened with some other episodes
That doesn't seem high to me. I live in upstate New York, and we'll even use the grill in the winter occasionally (maybe once a month). In the summer, probably twice a week.
Heh, heh... I'll admit it - I grill 3-4 times a week. Steak, burgers, veggies, breakfast eggs, pot of home made chili, even pizza! You name it - I'll grill it.
I also grill in the dead of winter. -45F doesn't deter me, either.
Winter grillers are a special fraternity of proud and crazy.
Yeah, I grill as often as I can. If all I have is charcoal, I'll use it once a week or so. If I've got a gas grill, I'll probably use it a few times a week. Everything just tastes better out there...
...Ofcourse, I can say the same for Tony Bourdain's No Reservations, Eric Ripert's Avec Eric, Martin Yan's 'Yan Can Cook', and a whole host of cooking shows that are no longer in production (Julia Child's 'The French Chef' etc., David Rosengarten's 'Taste', Stephen Yan's 'Wok with Yan', Two Fat Ladies, Graham Kerr's shows--including 'Galloping Gourmet', Justin Wilson's various shows, and Mario Batali's shows.)
This has to be one of my favorite episodes of good eats if just for the part where bob sets himself into orbit. :p Thanx for uploading my favorite show

Odd that they call wood ash acidic in this episode.
Potassium hydroxide solutions (made by filtering water through wood ash) were the traditional lye formulations.
