  • Hi, Undhiyu is my husband's all time favorite food. I would like to make it but almost all of my older family members have cholesterol problems. How can I make this good without frying the root vegetables?

    You don't have to fry. You can boil and add...or just saute boiled vegetables with very small amount of oil. I usually do that. I steam all vegetable and then saute with very little oil...hope this helps..

    Did you find it complex? Oh I forgot that yes, it does take little work but for me it's just matter of 10minutes in pressure cooker...

    I am gujrati and my mom prepared undhiyo probably twice a week. And I also saw many restaurants and dhaba making that way where I grew up, so not sure where you read traditioanal recipe. They are really not deep fried but cooked with lot of oil, so I basically say fried....these days, everybody is calorie concious so don't use more oil even so I try to show according to that...enjoy!

  • Usually people dont use the remainings of masala with water. but as you have done here,its the best way to respect your cooking by not wasting anything. by watching this my affection,devotion,respect has grown towards you more.     I made this recipe, except for the brown sugar part, used normal sugar, it turned out to be so so good, I am eating undhiyu for the first time and I must say its so yummy, my hubby is gujju, he absolutely loved it..Thanks for the amazing recipe and keep posting!!! Love

  • Yummy, if you were in sydney. you can start your business. lots of students would come to eat. You can charge 15 $ per dish. i miss gujarati food here.

    You can leave it out. I grow them in my garden so I am a big fan of green garlic. Enjoy!

  • there should be green banana (used to make banana chips), yellow one makes lumpy and too much sweet...also use min. water (or no water using covered pan with water on top), that will give some crispi-ness to all subzy, It is easier to cook baby egg plant with pressure-cooker but taste better if you cook all green subzy in open/covered pan. If you like real taste then have passion...traditionally Undhiu cooking takes almost 3 hrs.

  • I have left the undhiyo overnight and it definately tastes better the next day, since the flavours have had time to infuse into the vegetables for longer. I also added lemon juice which definately helps to bring out the flavour better. Thanks for your videos...i will keep trying more of your recipes!! Really tasty.

    My mother in law likes to eat left over undhiyu. She says, it taste better cold. I never eat cold food which is cooked already.. so!

    Yes, methi muthiya taste great on its own. I love with tea and I also add in some other recipes, such as daal fry, eggplant and it gives nice taste to many subjis. Enjoy!

  • I used the frozen papdi which was not very good, so next time i would definately use fresh, or just the val lilva without the papdi part. Needed to re-add some spices at the end like dhana jeeru and the garlic,ginger and chilli paste since some of the flavour was lost during the cooking...and i think i will eat it the next day so that the flavours have time to infuse for longer...thanks again for this video.

  • OMG! My mom took to to India (Gujarat) and we went to someone's farm where they made this under ground where they had dug a huge hole and put coals and stuff in it...I HATE eggplant but I ate it that day! Undhiyu with hot rotlis with ghee!! It was the BEST!!!! YUM!

    Surti papdi is kind of green seeded beans. Availalbe at Indian grocers fresh or frozen. If not you can also use fresh green soyabean or baby lima beans or simply green peas. Enjoy!
