  • Definitely one of my favourite curries. My childhood friend's mum used to make it all the time. I haven't found a restaurant in town that makes it so i'm sooooooo grateful for the recipe. Thanks tons!

  • you can try adding some amchur powder...gives a distinct falour (omit tomatoes in that case.. )

  • Hi ladies, I made this tonight, and it is delicious! I cheated a bit and used dried methi leaves -- I'm sure it's better with fresh leaves, and when I get some, I'll try it again. My version also came out quite spicy, as I didn't take the seeds out of the green chili (okay by me, as I like spicy). One question: where did you get your wok/frying pan? I used a regular large pan (not a non-stick one), and now I have potato muck stuck to the bottom. I'd love to have one like yours!

I am just learning to cook Indian food, and tomorrow I'm planning on making a foray to a local Indian market (we're lucky to have many in my area) to buy some spices and things. Do you have any recommendations? I look forward to watching your other videos!

    They have a sharp, slightly bitter taste but don't let that scare you. They are delicious!

  • 1. Try using a stainless steel pan and heat it up till it passes the mercury ball water test. Quickly add the oil and 'Sweat' out the onions on a low flame.

    2. In a separate stainless steel pan fry the potatoes in a high flame for 10-12mins with turmeric and only season with salt at the very end. Add the two together and resume your recipe. I added tomato puree to get some gravy or curry feel to it.

    Think of this as the French twist on the classic Indian dish.

  • Hey Anuja & Hetal...jus wanted to say A BIG THANK U to u guys...tried out this recipe for the first time by looking at your video and IT CAME OUT PERFECTLY WELL...its my hubby's fav dish and he completely loved it... I jus made a little changes as well...i added cummin seeds & mustard seeds to the hot oil b4 adding onions and also added ginger along with garlic...will surely have a look at ur other recipes as well and try them...Do keep up the good work...God Bless...

  • boy i didnt know that to make one bowl of aloo mathi i need to do so many things and have to go thorough all that hard work well it look really easy when u order it in the restaurant he bring anything in just 10 min well guys this is not our cup of tea i guess i would better eat frozen food ever day, but i wont go thorough all that crap i guess and belive me i have tired doing cooking stuff it looks easy but it aint easy as they show u in the video

  • Hey Anuja & Hetal: I tried this recipe and it came out just perfect. The only change I made is I soaked fenugreek leaves with lots of salt for more than half an hour and also I added turmeric & garam masala( lack of coriander masala ! :P ) at the time of tadka instead of at the end. The dish came out wonderfully and not a bit of bitterness. I love this recipe because this is by far the simplest one.

  • @ShowMeTheCurry you're welcome. Though could you please tell me why you added the 3 spices at the end ? I mean, the punjabi inside me forces me to add all masalas during tadka just so that they get fried.

    Well, of the three spices, turmeric is the only one you could safely add to the hot oil. The other two will burn instantly.

    Actually, methi has a bitter flavor...not minty at all. However, don't let that scare you. It is a very unique flavor

    methi. Word of caution, dried methi

    is more potent so use sparingly!

  • To all those people talking about their bad accent...you guys are all haters. They are doing a great job with posting so many recipes for us online. This requires time and preparation. These recipes might not be what you are used to, but these ladies deserve to be credited for their effort.

  • You are missing the point. No one denies that making any dish is indeed a work of art. And whoever is capable of that is truly divine. Food deserves respect and only then we really get its respect back. That said, there is nothing wrong in speaking in their original accents either. I dont understand why desis (specially!) try to speak like Americans if they were not born and raised there? Will the dish turn out different if they speak English in their original accents? Thats the issue.

    Have you wondered why someone speaking Hindi in Mumbai sounds different than someone speaking Hindi in Hyderabad? Your surroundings, not your ethnicity determines your accent.

  • I disagree. My uncle has been living in the United States for 38 years. He works for NASA and deals 99% of the time with proper Americans. Till today his accent is that of any Indian. It is a choice. You can change it if you wish to blend in - thats fine. But to say surroundings determine accents is seriously inaccurate. Specially if the accent is obviously fake.

  • @madhunov aCCENT? WHAT accent? They sound just great! I have indian customers that come to my store that speak really fast, but I'm past the accent. I rarely hear one. Now the speed of their speech..omg I can't keep up. But these lovely ladies sound like my aunts and cousins from Louisiana...lol
