You can definitly eat the stems. I sometimes just cut off the very bottom of the stalk and then cut the rest into pieces. You can cook these just as you would cook the florets, it may take a bit longer though since they are a bit tougher. And there is as much nutrition in the stems as in the florets. Broccoli is very good for you :)
It kind of threw me off that you added sugar when making the dressing but the salad looks really good
