this boss reminds me of the boss of level 4 on the game Mr Nuts for the SNES, the big giant in the sky one. Also with the hand action, trying to eat you (instead of puking his lunch) and the bouncing eyes. Actually, one of them at least got the idea from the other game, but i believe 2nd Samurai was developed earlier.
