well, takes from some1 born there: the food is spicy but not just spicy. It is the gr8 mixture from many other sense of flavors makes Sichuan food outstanding e.g. numbness along with spicy, and the word "ma'la" which had been mentioned several times in the video means Numb and Spicy, and that is Sichuan food really famous for.
