Small ones aren't worth the effort of filleting, they're mostly just stomach, but 2' plus and it makes a nice poor mans lobster meal. As they are invasive to most lakes I'll kill them and give them to a cat, yote, or simply use a fillet for catching a bigger fish.
they taste soo good, there are along of them in alberta lakes, they are an incredible species to fish. skin them and cuts longs strips from the meat, and them fry in a skillet with butter, great
