the sushi rice can it be regular white rice?

@Kagome8055 regular rice can be used but it may not stick as well on the seaweed paper compared to sushi rice. Instead of putting the rice on the outside of the roll I would flip it to the inside to prevent the rice from falling off.

you can use a lot of different sauces - mainly people like to dip the sushi in soy sauce mixed with a little bit of wasabi. in the video i talk about how to mix your own sauce for decoration
