Ripping a phonebook from the binding is actually easier - the reason is that when people do it that way, they've "baked" the book. When you bake it, it melts the glue in the binding which crystalizes and seeps into the pages. You crack the binding, it cracks the pages, and you keep pulling.

Look up Scam School and How to Rip a Phonebook on youtube. It goes over it in a lot of detail.
