Well, People who have the Opt-Out Plugin installed may not be trackable with Google Analytics, but you can still do Logfile Analysis. Comparing Visitor numbers of both tracking methods can give you a hint how many of your visitors have opted out or have java script deactivated. but of cause every method has its accuracy issues.

Will Google Instant preview have an effect on Google Analytics? I amnot sure how Google Instant works, that is how often the rendering of a page occurs - each time it is previewed or just once ( or once a day, week, month). And if the former, does not that mean that the analytics number will go significantly upwards?
I've decided not to explain how you can actually track those who might have opted out of tracking, but it might be interesting if Google could provide some figures around the numbers of downloads/installs for its opt-out tool and if the trend is increasing.

Furthermore it would be interesting to find something out about the installations of scriptblockers and adblockers, which also often block google Analytics and other tracking tools.
