Simple height fix: put a dirt block above the mushroom, with a space between the dirt and where you want the top of the mushroom. It wont grow any higher.

To stop the mushrooms from being too tall, just place a dirt block in the air above the mushroom one above maximum height you want. It may possibly take a few more bonemeals though.

@rogantu the point is, it limits it, but it takes more than 1 bonemeal.

@rogantu When you use a bone meal on a tree or mushroom it will chose 1 random look/height. If there is no room for that look/height then the mushroom/sapling will not grow and the bone meal will have been used unsuccessfully. So you will have to use bone meal until it choses the perfect height to make the giant mushroom, then create it.

@karlspel It's true that you can use an enchanted item with silk touch to get a mushroom block, but once a red portion of a red mushroom or the top portion of a brown mushroom is destroyed even if you use a silk touch enchanted item item on one of those sections on a mushroom, it will only give you a mushroom block that is the same texture and color as the stem of any giant mushroom. In other words, it's impossible without mods.
