'santu' is not 'saint-like', it means 'to be'.. so the meaning is like this

sarve(all) bhavantu(be) sukhinah(happy) sarve(all)santu(be)niramayaah(­disease-free) sarve(all) bhadrani(goodness)pashyantu(se­e) maa(may not) kashchid(anyone) duhkhbaagbhavet(be recipient of sorrow)
