Kerrigan probably needs the minerals as raw materials to create the actual Zerg units themselves; think of it as nutrients for their birthing and growing up.
I would get why terran would need money and all buy who is kerrigan gonna buy stuff from when the only people in the game willing to have anything with the zerg are the heroes or villains :/

@dessan18 Intentional. Wasn't really story related. I left out some dialogue in the first mission of episode iv as well.
