I work in the food business. Those thermometers are not accurate. They are banned from using to measure temps. Cuz you will get different readings every time. Try reading your coffee outdoors. Try reading it under a fan, then away from a fan.

Theoretically i think it would be impossible because the light from the thermometer would not bounce directly back in the direction it came from. Im not a scientist; this is just my theory.
