@NikkiBellez I used medium hi (7) all stoves heat differently. I heated the oil aprox 360 degrees, when I put the chicken in it drops down to about 330 degrees. You want to keep the oil at least 315-330 I find keeping oil at 350 degrees on a electric range top can be difficult to do.
you can also see if your oil is hot enough by taking about 2 drops of water and putting it into the oil and if the oil pops pretty loud then the oil is ready, if it doesnt then the oil is not ready.
