Remember that arrancar are born out of hollows, which are creatures who have become despair and apathy to the point of effectively not having souls. Zommari does not not assume that human souls are valuable things. He is from a world of bloodshed and hunger and animalistic life. He doesn't believe in divine right and wrong. He does not blame Byakuya for killing, but for acting like he has divine purpose in doing so. He scoffs at the righteous attitude.

The idea is basically for them to consume spiritual energy from whichever source, humans provide the least, where hollows and shinigami would provide alot more since they have more reiatsu. However, humans in the long run would be more ideal since they pose no threat to hollows unless its special humans like Quincy or Chad or Inoue to some extent.

I think Hollows have to eat humans to evolve into stronger hollows but if they eat other Hollows they turn into Arrancars this is just a theory.

Byakuya reminds me of Sesshoumaru (from Inuyasha). They both protect someone they SAY they don't like. Byakuya protects Rukia and cares about her like a brother should, and Sesshoumaru protefts Rin and cares for her like a father even though he says he hates humans.
