  • I did this, step for step and I hate mushrooms. But as much as I hate them my husband LOVES them. So of course I used them. I have to say, when they were sautee'ing, they smelled So good. I wouldn't ever leave them out for sake of my own marriage. :) I may have used a little too much tomato paste but it wasn't a problem. I will always use this recipe for pot roast! Thanks Chef John

  • The next time I make roast/stew, I'll definitely use this method. I screwed mine up last time I made it by cutting the meat in sizes too small. Everything turned into mush!

    Please do not project your failure to enjoy food on the rest of us. Go sit in a dark corner and stew about not liking mushrooms and let the rest of us enjoy their HUGE variety of flavors and textures.

  • @Nickodemusodurn Why do you think I don't enjoy food? Do you like every type of food in existence? Mushrooms are disgusting and add NOTHING to a dish except the taste of shit. I bet you eat lasagna with ricotta cheese which is just as nasty. I don't like fish or seafood either. The smell alone is enough to make me gag. I have a super sharp sense of taste and smell so things like fish and mushrooms register as gross to me. You have a dull sense of taste.

    True lovers of food lament at a food they do not like, since surely they are missing out on even more flavours. Chef John would disapprove friend! Not at your dislike of a food, but at your slamming of others who enjoy it.

  • @CainmosniMirrored a "super sharp sense of taste and smell" wouldn't make things taste worse for you unless they are actually bad food like all fastfood, seafood and mushrooms both taste delicious to certain people and just because you dont like it doesn't mean its bad it means you dont like it, get over yourself

  • @battelman97 You have no idea what your talking about. Look up supertasters. Supertasters have a higher concentration of taste buds and can taste things more intensely than normal tasters and non tasters. Therefore, things that are strong and pungent like mushrooms are way too overbearing and taste gross. It is similar to eating a whole packet of beef ramen seasoning plain all at once. It isn't pleasant.

    I have no clue whatsoever if that's true, but my dad definitely has a dull sense of taste and loves the shit out of mushrooms.

    I don't like them really, but for me it's a texture problem. To me, they're kind of dry and cardboard-ey or styrofoam-ey raw, and kind of slimy and chewy when cooked. It's just not my thing at all. And I must admit, the whole being grown in poop thing doesn't exactly encourage me to overcome my dislike for them.. I absolutely hate the idea of poop

  • Good recipe except I don't understand the bit about the vegetables. Putting the vegetables in with the meat at the beginning is OK for flavoring but you also need to put in some vegetables an hour before the end which is all the time they need to cook. The vegetables put in at the beginning will be mush. Also, I prefer rice cooked separately in a rice cooker and served with this roast and its vegetables. Then I have extra rice for several days for left over roast and other things. Nice man.

  • @MissEricaGirl It's hard to replace mushroom, but you can probably pull off this recipe without the mushrooms.

    It will lack little in taste and texture.

    Some people suggest adding more stock or spice to compensate but I don't think that will work with this recipe.

  • Meat, mushrooms, butter, pepper, onions and carrots.

  • @asiew Lamb would be my choice, if I wanted to make that recipe without beef. A nice big leg of lamb, butterflied, could be treated exactly like the beef roast in the video, and I promise you'd like the results.

  • you're right...browning the meat is super important for flavor...otherwise your meat will be bland and you'll wish you would have taken the time to sear it!

  • For those unable to understand them, slow cookers run at a low heat and cook slowly. Good for tougher cuts. Unlike the burners on your stove the slow cooker can run completely unattended fairly safely. The slow cooker uses a lot less energy than a stove top burner for a long slow cook. The energy savings over an oven cooked meal are less clear - but the longer the meal takes in the oven the more energy savings favour your slow cooker.

  • @falloutsyndrom You have to remember- it gets hot as hell here in the US. Unlike rainy, cold Europe. So the crockpot was created so as to not have to use the oven/stove.

  • Pot roast is perfect for this time of year in Ohio, the weather is cooling off, the leaves are starting to change color and a nice comfort food dish like this fits in perfect. Chef John I tell a lot of customers at the store I work at, about your site, they love it too!
