I use the Blunderbuss for close-range, it works like a charm. You'll shoot down anyone in a light or medium plane in a single shot if you get a decent shot, and you don't have to line it up perfectly. And use the Leech for turrets.
I started playing it two days ago and was just like you. Just do what i did, play for two hours and experiment with different planes and weapons until you find the right ones. After that only use that setup so you can master it and if your having problems with flying the plane just do some missions to get practice on it then all it takes is some practice and experience.
