i think they operate it off stage, because last weekend Pinnochio's nose broke in half after it grew and there was this little cord-looking thing holding it together, and then it looked like it was being pulled up and John Tartaglia wasn't doing anything. but i don't know. :)
I saw Shrek from the front row lotto seats two weeks ago with a friend of mine and it looked like Pinnochio had something in his hand that controlled the nose. I'm not positive though. We did see an understudy, so if that is the case John Tartaglia is probably more practiced on hiding it.
yh that controls the noes it doesn't matter if he shows it though cos once he showed it during the show wen he was trying to get the fary tale creatuers attention
When a theatre around here did Pinnochio, they explained how it worked. Basically he has little air hoses going from his nose along both sides of his cheeks and up to his hat. And there's got to be a little switch or something that pumps air into his nose. The kid who was Pinnochio in the theatre had a little air pump in his pocket that he squeezed. I'm guessing that since this is on Broadway they might have something higher tech than that. ;)
I met Chris! he's very nice and was amazing in Shrek. =)

QQ [quick question]:
How on earth do they make Pinnochio's nose grow? It looks so fake here but I know they must do it somehow on stage.

Oh sad! It was a great show though, wasn't it? I loved it. I wish you could have seen John in it...he's truly amazing.

It is...and John is, though if you do see him in it, look close at his right hand the first time his nose goes out. You spot it when you look for it.
