These games (the BGs) were just so great. The music, the dialogue, the twisting storylines, the likeable (and dislikeable) NPCs, the excellent D&D rules, the vast number of quests, the humour, the drama, the challenging combat, the incredible attention to detail - all in all as close to gaming perfection as is possible. Games nowadays are very poor compared with the IE games in general. BG2 was possibly the best of them all but they were all SO good.

Not quite, actually. Mindflayers would lower your intelligence by a number of points on every hit. As such, characters with high intelligence could withstand a few hits. If you had low intelligence (for instance, 3), then you would get killed in a single hit (you try living without brains :P).
And there are a number of nifty tactics to discard Mind Flayers fairly easily. Most enemies have some sort of weak spot, so if you can find it... ;)
even then mindflayers are brutal, you cant even resurrect from a mindflayer death if i recall, and its very hard to survive their mind assaults that stuns charms and all that.
My tactic was just to spam skeleton warriors, haste them and send them do their thing and wait until everything calms down, it was really boring to proceed that way however..
I'm fairly sure I ressurected a few partymembers who had died at the tentacles of Mindflayers in the past.

An easy way to kill them: First set a few traps. Then, try to lure them near them using summons. Very effective. If you have Yoshimo, you can also use his special trap; toss it right in the middle of a group of them while you're out of sight, and lead those who follow over the traps.
You've got spells for any situations. The hard part is to keep them accessible at the right time. So you can actually beat anyone, if you just fill up the books properly before every break. For someone playing for the first time it is of course - pain in the ass.

or a ranger (celestial fury \ daystar ) I always give myself the ring of gaxx and a ring of regeneration
boots of speed. necklace of magic resistance
helm of baduran and gauntlets of dexterity(ranger) or holiness(paladin)
cloak of charisma(paladin) or Montilio's cloak (ranger) belt of --- strength
heart seeker bow(yes even as a paladin)
