I'm a keyboardist, but I asked Jimi to show me scales on guitar so I could try to write on it. At lessons and live, when he played at lightning speed, every note was meaningful musically, not random. He purposefully does not stick to one scale because that would be incredibly tiresome and mundane. Different phrases and scales create interesting harmonies and tensions against one bass line, like at :18. Shredders who stay in one scale are just practicing, boring as hell, nothing musical there.
