Gusta is not 'like', more 'appeals / pleases'. You could say 'me gusta el español' - 'Spanish pleases me' (or fully translated 'I like Spanish'). 'Me encanta' is a way of saying 'I love' (or more literally 'it charms / delights me') - So 'Me encanta el español' is ok too.
