@kain424, awesome. What other dialogue was cut out? Van Damme did a film called Knock Off with another Hong Kong director - Tsui Hark. That film was cut to shreds. The fights were the typical Sammo Hung quality: long, intricate and hard-hitting.
@JosephKuby I find Knock Off to be underrated, actually. Yeah, it's weird and Van Damme was so high he doesn't remember filming it, but I think it's like a fun little Jackie Chan movie starring JCVD.
As for other dialog being cut in Hard Target, I'd have to watch it again. I know the part where the guy gets his ear gut was longer and gorier, and there may have been a bit more between Vosloo and Henricksen, but I can't remember everything. There is a bit more with Vosloo hunting them.
@kain424, originally Jet Li was to be Van Damme's sidekick (the part Michael Wong played).
Kim Maree Penn (who plays one of the CIA agents) was also scheduled to let loose in a fight scene but drastic changes to the shooting script and deleted scenes took away the majority of the film's thunder.
In the original script, Jet was to be an undercover Mainland Chinese secret agent teaming up with rogue CIA agent JCVD.
@kain424, K.O. was going to end with the heroes escaping a raging inferno by tying their jeans together to make a rope ladder, while the baddies attempting to do the same, tumble to their deaths when their "knock off" jeans come undone.
The heroes then traverse an underground tunnel leading from Macau to HK, only to emerge in the midst of a parade and shake hands with Prince Charles as he officiates the handover.
After Li jumped ship, the script underwent major rewrites that promised a lot.

The animal scene is offcourse disturbing and the movie would have been controversial. But I'd love a director's cut anyway!
