See my pancake coil winder videos, I use double stick tape on the CD substrate to hold the wire in place as it is being wound. After winding, I spray the coil with clear enamel.
Using these methods, I have been able to wind multiple layers of wire by adding a layer of double stick tape in between.
I am not sure of the benefit of using multiple layers to make a "larger" pancake coil though. It seems that a "larger" coil should have more turns an a larger diameter instead of multiple layers.

How did you wind 35 AWG? I tried 30 and got lost too fast. WOW nice job!
