I have been making BOSS GT-10 patches using a 64-band spectrum analyzer and I can appreciate wanting a guitar that supports a full frequency response. The only problem I see using a piezo pickup is you are stuck with the sound it produces at the bridge location; Perhaps EMG (or other pickup Manufacturers) could make their EMG-89 (single and dual-coil pickup) support a full frequency response. I hope someday they will.
continued: Often when making BOSS GT-10 patches I have to push up low-bass frequencies from 20Hz to 150Hz and high-treble frequencies from 6,000Hz to 20,000Hz with a graphic/parametric EQ; Doing so also pushes up the noise floor; If a guitar had full frequency pickups installed, the low bass and high treble frequencies would be much louder and I wouldn't have to push up those frequencies nearly as much (keeping that noise floor down where it belongs);

If a person doesn't like hearing those extra low-bass and high-treble frequencies that could easily be removed with a high-pass/low-pass EQ feature on the guitar or amp/effects-processor. But having full frequency pickups would be one nice feature to have; A feature I would appreciate. A lot of guitars only have 22-frets, but I prefer a guitar neck that has 24-frets; It's a nice feature to have as well.

I said the EXACT same thing. It plays great, stays in tune, and the bridge on the zt3's are awesome... it's just ugly as fuck dude! It's like looking at a Mercedes without a front bumper... like where the hell is the head on this guitar?! It's weird lookin, that's for sure.

Piezos are crystals that, when compressed, generate electricity so that when arranged in a pickup system the vibrations from the string oscillate a signal at the same freq. They pinch at the bridge and there's the sound.
Many piezos sound like a nylon acoustic, yet a little muted for me, a high gainy shredder type.

The difference between acoustic and piezo is:
The bass strings of the acoustic guitar sounds like it is made of brass, so it has a "metally" or harder tune...
The Piezo sounds like it has nylon strings instead of brass strings for the bass column.
The Piezo sounds more soft and distinguishly Spanish classical.
