I noticed in UFC and other MMA it seems the fighter won't let go until the ref pulls their arm away. I guess they want to ensure totally and completely the fight is over. Personally I agree with ya, when a guy taps, that's it man, no need in holding the choke any longer than necessary.

When a blood choke is applied on your neck and you are slowly going out, that's the moment you tap. At that moment you aren't clear and you won't always clearly recognise the difference between a guy letting go and the referee stopping it when he isn't up in there. If anyone should know this it's Renzo Gracie. But apparently his attitude as a coach is just as shitty as his MMA skills.
But if you want someone to blame. The referee should have been seperating them. Not been getting pushed off.

Nate overreacted for Ricardo holding the submission several seconds longer than he should have, and Renzo reacted in outrage for the punch after. Poor show of class by both fighters as Ricardo should not have held the submission an extra couple of seconds, but Nate should not have thrown the strike after the stoppage.

Once you lock on that choke it's nearly IMPOSSIBLE to release your hands against a struggling opponent, they are completely locked in the gable grip with ~2 extra inches total of gloves being pressured together by your chests, you can see that Almeida was only ABLE to release after Marq put his upper body down. Almeida wasn't showing poor sportsmanship, Marquardt definitely was, no matter how choked he got.

@Andarovin Just to be clear it can be very hard to release a gable grip wearing MMA fighting gloves, I know this from experience. (I unintentionally held a guillotine on someone in my guard for way, way too long after they had tapped because I didn't realize this)
