I am sorry that the audio is poor but there was a loud engine sound from the riverboat engines in the background because they were crusing down the Illinois River at the time the video was made.
I just read this comment of two years ago. Actually, they are "picking" single string on the leads, The "strumming," also obviously with the same pick, is when they're accompanying. Hence, they're both "pickers" and "strummers."

I've never heard it described that way, but I guess you're correct. The outcome is the same, a lot of notes but with only one pick.
