They had three different composers: One for each race. Yes, Terran got it's own composer, Protoss got it's own composer, and Zerg got it's own composer.

@Mesosolley According to the collector's edition, I think it says somewhere that each race had a different composer. So all the music you hear in the game are from 3 different people! =] I think that is absolutely awesome.
