Yes, it would be very possible to carve a face such as this into a tree but I would sure speed up your carving time if you had similar sized knives as in the video. Perhaps a small set of palm carving tools would work but that would be quite the task. I strongly recommend using medium sized knives and a small wooden mallet for a much more pleasurable carving experience.
The spot under his chin was a knot that was somewhat hidden under the bark and it was clean carving down to about the 1/2" mark. Looking at the chunk of wood prior to carving I thought that it would not cause any problems but the further in I got, the more "bad" wood was exposed. In the end it didn't cause any problems with the final finish and the paint job cleaned it up just fine. I must admit that it scared me a little when I first hit it. Oh well, just roll on with the punches! :)
