From a fat point of view - when you add oil to a pan and DO NOT HEAT the pan first - your ingredients like veggies absorb the oil and actually gain unnecessary fat. It makes much more sense and flavour wise that you heat the oil first to "hot" and then add veggies. You also get the desirable browning of food in a less fact package.

@h2obender1 Only if it's all metal. Some nonstick pans have a heady duty poly handle, it'll smoke and possibly burn in the oven.

And why do you boil your veggies? Most of the nutrients get transferred to the water that way. Try roasting them or even pan fry.

I discovered Tempeh in Bali and I thought it was great Vegan Food,
But in the UK I found it very expensive at Health Food Stores.
I was planning to start making my own...Search YT it's Quite easy.
But just Yesterday I was shopping in Chinatown, London UK. and discovered very inexpensive Tempeh...Like He is using.
I bought 2.4kg for £16=about US$26
Go to Chinatown for Tempeh...or buy Mail order.
Or DIY...All the best

if you dont want to buy it, you need
2 cups katshup
1/4cup brown sugar
1/4 cider vinegar
2 tablspoon worchestershire sauce
3 drops liquid smoke
1/2 tablespoon onion [owder
1 teaspoon garlic powder
1. combine all ingredients then simmer for 45 minutes
