I made these, and they didn't turn out right... they ended up being very dense and tough. Anybody have any tips what I did wrong? I want to make about 50 or so of these for Thanksgiving.
@Mac1634 I have been reading around and I understand that the amount of flour has been effecting people as well as how fresh the yeast is. Make sure it is fresh and foams when introduced to the milk and sugar. Add flour until you visually see the dough looks as it should. When rolling the rolls be careful to use very little flour. Also, be extremely gentle as handling it too much causes toughness. Good luck! Happy Thanksgiving!
@Mac1634 I made them once, and they were CHEWY, I figured out that I had needed them to much. The more you mess with the dough, the tougher it becomes. Next time, literally just knead until the dough comes together. I beat the hell out of mine the first time...not such a great idea lol. Good luck!

I subscribed to your videos. The camera angels really let me see exactly how you are doing something. You are so pleasant to watch & listen too! Only one complaint, sorry, some of the amounts of the ingredients i.e. salt, and type of flour you are using was not made clear. I am a first time bread maker. It might be obvious to other cooks but I could use specifics. Love the videos!
I learned it from a trained chef, how ever it took me several attempts till I got some thing called bread-like, but with your technique, now I make not just bread but good looking and in-fact bakery quality bread.
just in case anyone was wondering what kind of yeast to use, i used 1 packet of "Fleischmann's" Active Dry Yeast (7g) you can purchase about 3 packets from the grocery store for about $2.50. In CALIFORNIA that is. lol
i just got done using this method and it works great! the rolls came out very soft in the middle and had the same golden brown color. I kept my rolls in for 16mins at 425F. instead of the egg wash method i used a very small amount of vegetable oil, but it works the same. the only thing i had trouble with was forming the rolls like you did, mine came out looking like biscuts, but all in all they tasted fantastic!! thank you so much for this video! it was a huge help and i will always use it
I enjoy your videos but on Youtube now you can add your written recipes here above at the "Link Section" which is the better way for us to Read, Copy & Paste. This way we don't have to go back & forth in the video to try to write the recipes which is very time consuming and not really practical.

One grammar correction, vahchef: Whenever you start your recipe, you always start with 'Add something' That is WRONG! Add the first ingredient to what? If it the first thing we put in a bowl/utensil/pan/container, we don't ADD it to anything. We just put it in whatever we are putting the first ingredient in. I made the bread rolls according to your recipe and thanks to you I have lost all fear I had over yeast..and my bread rolls were so lovely we just had them with butter.Thank you very much and may god bless you!
add.2 tsp yeast, 1 cup warm milk, 2 tsp sugar. mix. leave for 10 min. beat 2 eggs in a seperate bowl (egg optional) add eggs to yeast mixure.make sure milk is 105 -110 F. Add melted butter to mixure about 1/4 cup,i think. in a seperate bowl get 4 cups of flour ,add 2 tsp salt,mix.make a well in the middle add yeast mixture.slowly mix.make soft dough. thats the ingredients and some stuff u need to know ,watch the video to out the rest.
I saw this written recipe and I wasn't sure exactly how to follow certain steps, like how to tell when the dough looks ready for each new step, but this video was very informative. I plan on making these very soon :)

@djbhey Probly a little more water in your dough and more rise time. Make sure that when you are kneading your dough you dont push out all the air. Its been said that a baker needs "An iron hand in a velvet glove". Give it some more practice and you will get it. I had to make a dozen batches or so to start getting it right. A great resource is thefreshloaf(dot)com TONS of good stuff there.

With floured hands, pinched off rolls as per video. Used canola oil on cookie sheet. Covered with warm, wet dish cloth and let rise for 30 minutes. I used 1 additional egg + 1/4 C water for the egg wash right before baking. Baked at 425°F for 15 minutes. They DID seem hard at first, but quickly softened up. Might adjust baking time to 11-12 minutes next time.
Next time I may add a little sugar to the flour, or honey to the eggs/butter for a little more flavor. But they were excellent!
I let the yeast/milk/sugar proof for 10 minutes, whisked the egg/butter in a separate bowl and then slowly whisked it into the yeast mixture. Then I slowly poured all of that into the flour - pour/mix/pour/mix/pour/mix.
Kneaded the dough for 10 minutes, then brushed with a little oil & let rise for 1 1/4 hour under a warm, wet dish cloth. Punched down - no additional kneading - let rest 10 minutes.
I wanted to add some info since people seem confused by contradictions in the video compared to the recipe posted on the chef's site. I made these tonight, and they came out wonderfully. I am probably going to have to do this in more than one reply, so bear with me.
Quantities I used:
4 C All-purpose Flour
4 Tbl Butter
2 Eggs
1 C Milk @ 110°F
1 tsp Salt
2 tsp Sugar
2 tsp Active Dry Yeast - the kind you get in a row of little pouches.

Melted butter the quanty ?
1 1/2 tablespoons I think it should be 1 1/2 teaspoons or it will be salty.
Hope if the video could be replaced as it will be useful for the ones who pick your recepies.

One grammar correction, vahchef: Whenever you start your recipe, you always start with 'Add something' That is WRONG! Add the first ingredient to what? If it the first thing we put in a bowl/utensil/pan/container, we don't ADD it to anything. We just put it in whatever we are putting the first ingredient in. You can say something like 'Let's start with' or 'Put' If you actually saw this comment, please correct the mistake you do in all your videos. Thanks for the videos! Im 13, a telugu girl!

add.2 tsp yeast, 1 cup warm milk, 2 tsp sugar. mix. leave for 10 min. beat 2 eggs in a seperate bowl (egg optional) add eggs to yeast mixure.make sure milk is 105 -110 F. Add melted butter to mixure about 1/4 cup,i think. in a seperate bowl get 4 cups of flour ,add 2 tsp salt,mix.make a well in the middle add yeast mixture.slowly mix.make soft dough. thats the ingredients and some stuff u need to know ,watch the video to out the rest.

@mrkjshjavier On the website it says. Preheat the oven for 425F/220C bake for 15-20 till golden brown colour.
once it is done then apply butter on top of it.

I saw this written recipe and I wasn't sure exactly how to follow certain steps, like how to tell when the dough looks ready for each new step, but this video was very informative. I plan on making these very soon :)

@djbhey Probly a little more water in your dough and more rise time. Make sure that when you are kneading your dough you dont push out all the air. Its been said that a baker needs "An iron hand in a velvet glove". Give it some more practice and you will get it. I had to make a dozen batches or so to start getting it right. A great resource is thefreshloaf(dot)com TONS of good stuff there.

With floured hands, pinched off rolls as per video. Used canola oil on cookie sheet. Covered with warm, wet dish cloth and let rise for 30 minutes. I used 1 additional egg + 1/4 C water for the egg wash right before baking. Baked at 425°F for 15 minutes. They DID seem hard at first, but quickly softened up. Might adjust baking time to 11-12 minutes next time.
Next time I may add a little sugar to the flour, or honey to the eggs/butter for a little more flavor. But they were excellent!

I let the yeast/milk/sugar proof for 10 minutes, whisked the egg/butter in a separate bowl and then slowly whisked it into the yeast mixture. Then I slowly poured all of that into the flour - pour/mix/pour/mix/pour/mix.
Kneaded the dough for 10 minutes, then brushed with a little oil & let rise for 1 1/4 hour under a warm, wet dish cloth. Punched down - no additional kneading - let rest 10 minutes.

I wanted to add some info since people seem confused by contradictions in the video compared to the recipe posted on the chef's site. I made these tonight, and they came out wonderfully. I am probably going to have to do this in more than one reply, so bear with me.
Quantities I used:
4 C All-purpose Flour
4 Tbl Butter
2 Eggs
1 C Milk @ 110°F
1 tsp Salt
2 tsp Sugar
2 tsp Active Dry Yeast - the kind you get in a row of little pouches.
