I'm cooking my first tenderloin and the butcher at Kroger was going to charge extra for trimming...I told her no thanks and figured I could do it myself...I'm glad you posted this video...it was the best one I've seen and it helped make it an easy task!
Thank you for posting this, I love to make tenderloin and the price of the trimmed center cut at our costco is $17.99 per pound or more during the holidays. I always see the full tenderloin right around $8.99 per pound, both are USDA choice, but I never have an easy time trimming it and getting the silver skin off. I also usually just cut off the ends and make small steaks but I love the way this was left whole and tucked under for even cooking. Thanks again for sharing your expertise!
