hello cookingisland! is this the same as the 500 gram pack of sponge cake flour found in the Asian food/Chinese market? Its a Rooster brand (says made in Australia) and all the vanilla flavour, baking powder, emulsifiers, etc are mixed in the flour. just add wet ingredients: eggs, oil, water etc. I am in New Zealand and we don't have cake flour. Otherwise I would have made one from scratch. I found a mix but half is written in Chinese.
an irish sponge cake mix is 4 eggs 4 ounzes caster sugar (super fine sugar)and 4 ounzes self raising flour and a little vanilla extract,,,,,beat the eggs and sugar together on hi speed in kitchen aid mixer until light a creamy add the vanilla just before switching off mixer,then fold in the flour in the figure of 8,then turn into 2,8inch pans and bake at 200 degrees centagrade for 12 to 15 mins and cool..fill with strawberry jelly and cream yum!!!check out my video on it!!!!

So easy to break apart! Is it cos of the ribbon state batter? Or generally the premix does not require any complex procedure? just beat everything together???
some other qns: if i were to bake with individual ingredients, do we use baking powder or soda or none??

you should put your liquids in the bowl first, then you dont have to waste time by mixing it by hand and just put it on the mixer for a 1 min and then scrape the bowl down, and mix it on high speed. you made a premix look very complicated
