  • looks good. in arkansas where I live, we use red potatoes cut in a medium small dice. i've never seen fried potatoes cut like this.

  • i just tried making these and they turned into extra crispy potato chips...i want them so bad, but my mom doesn't make them anymore cause my dad's gaining too much weight :/ Blecck

  • Delicious, and I also suspect that because potatoes and onions were inexpensive and plentiful, a lot of people during the depression era ate them. And they certainly stand as a nice side dish today!

  • Hi Betty - really nice recipe - an old recipe here in England is something called "Lancashire hot pot" which has lamb/mutton, potatoes and onion.

    The glazed potatoes remind me of the crusty top of the hot-pot.

    Will be looking at your other recipes. I really like your Southern accent : )

    ps. would the recipe work with white potatoes ?

  • I would add some fresh garlic teeth to the pan for the last 10 minutes.

  • When you make this dish do you ever experience sticking ? Does it help to use a non stick pan when making this dish ? I'd like to try this dish again for my dinner tonight .

  • @dizzydija It probably does help to use a nonstick pan. I use a spatula and go under the bottom and turn them a few times to keep them from sticking.

I have a few Mexican dishes in bettyskitchen; you might search for enchilada, taco, burrito, gaucamole, salsa, pico de gallo, chili, tortillas, nachos, fajitas, etc. to find some of those recipes in bettyskitchen.

  • Does the oil add any flavor based on what type you use? Is that why you used peanut oil instead of vegetable or canola?

  • @bookmark71 Actually, you can taste the flavor of peanut oil, but it tastes good, I think. I use it for frying, because it has a high smoking point, so I don't have to worry about that.

  • Betty , I am a 50 year old divorced guy trying to learn how to cook a little. My Mother made the absolute best fried potatoes. I have tried for years to duplicate them and have never came close. When she passed away I actually got the same cast iron skillet she used. Mine are allways good by my standards,but not the run to the table kind that she made. I will give your recipe a shot and see what happens. Thanks for the info !

  • @jessnm678 A lid is not essential, but the potatoes will dry out a bit if they are not covered. You can use aluminum foil in place of a lid.

  • I tried making fried potatoes using raw potatoes once a long time ago. They turned out horribly (I think it is b/c I didn't put a lid on it). When I make fried potatoes now, I usually use left over baked potatoes from the night before. That way they are already soft and all I need to do is brown them. (I learned that trick from a restaurant I worked at a while ago)

  • @love2hatedrugs My parents used bacon grease a lot. I have gotten away from it; I love the taste, but I try to choose healthier oils and fats.

    Love how you prepare all ingredients in required measurements (in cups and spoons) before you start shooting and detailed recipe in video description.

    PS: its 3:30 Am here and I am starving .... am gonna hit the kitchen and fetch myself some 'Country Fried Potatoes' !

  • well i just wanna say that I LOOOOVVVEEEE food and since im only 18 and wanting to explore new things, i wanted to get to do wat makes me happy. (FOOD). sooooo......since breakfast is my favorite part of the day. I am gonna try this out for a test run. I figure the oil part is the most risky but i should be fine. I even might explore it by adding some cheese on top as well. mmmmmm.... cant wait. Thanks a lot Betty.

  • I slice my potatoes on a mandolin, fry a few at a time with a little safflower oil...I don't like peanuts, and it doesn't flavor your food or give you indigestion like other oils. I let them cook a little on both sides then, using a spatula(turner), place on paper towels to absorb the excess oil. Then sprinkle with a little salt. I ♥ to eat them with catsup in the winter. Reminds me of my grandmother.

  • fry them in bacon grease. it is the best way, lard will work if you don't have bacon grease. salt, pepper, garlic powder and mrs dash original flavor seasoning. I don't care about " eating right", everyone dies sometime so why not eat what you want?

    No, a skillet isn't a wok. A wok is much deeper, with a small base and larger top. A skillet, is the same size from top to bottom and can come in different depths and widths. Where as a wok is normally one shape and size. You can get larger woks, like they use in restaurants.

  • I am making these tonight! i have canola oil which is a little healthier than vegetable oil, i am using a few shakes of Mrs. Dash seasoning to the mix as well as a few teaspoons of Italian seasonings from the grinder.

  • I get the best results from peanut oil, and I think it is healthier than margarine. Sunflower oil doesn't do as well for me--but it is healthy. Thanks for your nice compliments. No, I haven't see the little girl--I will look for her!

  • my mother always cooked fried potatoes..........she grew up in the 30's depression says and she grew to love fried potatoes. She make the potatoes with onions and green peppers and I would eat them with jelly bread.We thought it was Italian food but until this day i love them.

  • Interesting! We always grew huge vegetable gardens, so there were always plenty of potatoes. I've eaten lots of fried potatoes in my life--I don't eat so much now because of watching fat. But they really are good and homey! Thanks for commenting!
